The results were striking. After just one week, those who consumed elderberry juice showed significant positive changes in their gut microbiota. Additionally, they experienced an average of 24% lower blood glucose levels and a 9% decrease in insulin levels. Most notably, elderberry drinkers exhibited a significant increase in fat oxidation, suggesting that the berry aids in breaking down fatty acids more efficiently.

Patrick Solverson, the study’s corresponding author and an assistant professor at Washington State University, emphasized the significance of these findings.
